This is a staple for whenever we go to the mountains for hiking. Very tasty and filling- perfect for a break in between good, long walks. This is also a great way to use up any smoked turkey you may have (eg., from Thanksgiving). I make 2 substitutions: I sometimes use a bag of cole slaw instead of salad greens for an extra crunch; I spread some flavored cream cheese on the tortillas for extra flavor and to cut the dryness- french onion flavor or vegetable flavor works well.

Ingredients
- 2 cups coarsely chopped smoked turkey breast (about 8 ounces)
- 2 cups gourmet salad greens
- 1/2 cup fresh corn kernels (about 1 ear)
- 1/2 cup chopped red bell pepper
- 1/4 cup thinly sliced green onions
- 3 tablespoons light ranch dressing
- 4 (8-inch) flour tortillas
Preparation
- Combine first 6 ingredients in a large bowl, tossing well to coat. Warm tortillas according to package directions. Top each tortilla with 1 cup turkey mixture; roll up. Cut each wrap in half diagonally.
