Ingredients

1 pound ground turkey
1 cup chopped onion
1 garlic clove, minced
1/2 cup chopped green bell pepper
1 (14 1/2-ounce) can diced tomatoes
1/4 cup tomato paste
1 tablespoon prepared mustard
1 teaspoon chili powder
3/4 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
4 (2-ounce) kaiser rolls or hamburger buns, split
1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese

Preparation

Cook turkey, onion, and garlic in a large nonstick skillet over high heat until browned, stirring to crumble. Stir in bell pepper and next 7 ingredients (bell pepper through black pepper). Bring to a boil; cover, reduce heat, and simmer 10 minutes.

Spoon 1/2 cup turkey mixture onto each roll half; top each with 2 tablespoons cheese.
