Ingredients
- 3 tablespoons light mayonnaise
- 1 1/2 tablespoons prepared mustard
- 1 1/2 tablespoons honey
- 1/2 teaspoon curry powder
- 8 (1-ounce) slices whole wheat bread, toasted
- 8 ounces oven-roasted turkey breast, thinly sliced
- 1/2 cup thinly sliced red onion (about 1 small)
- 1/2 green bell pepper, thinly sliced
- 3/4 cup alfalfa sprouts
- 2 tablespoons sunflower seed kernels
Preparation
- Combine first 4 ingredients in a small bowl, stirring with a whisk. Spread mayonnaise mixture evenly over 1 side of each slice of toast.
- Place 1 slice on each of 4 plates, coated side up. Top each with equal amounts of turkey, onion, bell pepper, and sprouts. Sprinkle 1 1/2 teaspoons sunflower kernels over each sandwich. Top with remaining slices of toast, coated side down.
