Ingredients

  • 1 1/2 cups finely shredded cabbage
  • 1 1/2 tablespoons fat-free Thousand Island dressing
  • 1 tablespoon light mayonnaise
  • 1 tablespoon Dijon mustard
  • 12 (1-ounce) slices rye bread
  • 6 ounces thinly sliced cooked turkey breast
  • 6 (3/4-ounce) slices reduced-fat Swiss cheese
  • Butter-flavored cooking spray

Preparation

  1. Combine first 3 ingredients in a medium bowl; toss well, and set aside.
  2. Spread mustard evenly over 6 bread slices, and top with turkey. Top each with 1 cheese slice and 1/4 cup cabbage mixture. Top with remaining bread slices.
  3. Spray both sides of each sandwich with cooking spray; place on a hot griddle or skillet coated with cooking spray. Cook 2 minutes on each side or until bread is lightly browned and cheese melts. Serve immediately.
