Turkey and Olive Tapenade

Yield Serves 1


  • 2 slices whole-grain bread
  • 1 tablespoon olive tapenade
  • 1/2 cup arugula
  • Dash of olive oil
  • Dash of balsamic vinegar
  • 4 slices roasted turkey
  • 4 slices roasted red bell pepper
  • 2 tablespoons crumbled goat cheese
  • Salt and pepper to taste

How to Make It

  1. Mix olive oil and vinegar in small bowl. Set aside. Spread olive tapenade on both bread slices. Set aside one bread slice. On remaining bread slice layer arugula, turkey, bell pepper, and goat cheese and drizzle olive oil and vinegar mixture to top. Add salt and pepper to taste and cover with remaining bread slice.
