Turkey Meatball Subs

    This recipe is fantastic! I use a cookie dough scooper to make smaller meatballs and there are about 4 meatballs per sandwich. My daughters 5 & 3 yrs are ridiculously picky and rarely try anything I make and when they do, they usually don't like it. They LOVED these! Love that they are easy and budget friendly too. I usually alter the recipe and broil them in the oven for about 10 min instead of doing it in a pan. I think this might work better with the smaller ones that I make, and I think broiling is faster. Normally, I don't have provolone, so instead I sprinkle parmesan & garlic salt on the bun. I have actually made these and frozen them too. Still terrific! I also do a 'cooking club' - where we make a huge batch of whatever we are cooking and then trade meals with a few friends. This got rave reviews. Some people might shy away from having to hand roll a bunch of meatballs - takes forever - and I would too - but now that I make these with the scooper it takes literally NO TIME!
