2 pounds ground turkey breast
1 cup quick-cooking oats
1/2 cup ketchup
1/4 cup chopped fresh parsley
1/4 cup (1 ounce) grated fresh Parmesan cheese
1 tablespoon dried oregano
3 tablespoons Worcestershire sauce
2 tablespoons low-sodium soy sauce
2 teaspoons dried basil
1 teaspoon garlic powder
1/4 cup ketchup
How to Make It
Preheat oven to 400°.
Combine the first 10 ingredients in a large bowl.
Place the turkey mixture in a 9 x 5-inch loaf pan coated with cooking spray. Top with 1/4 cup ketchup. Bake at 400° for 1 hour and 15 minutes or until done. Let stand for 10 minutes before slicing.
This is the only meat loaf recipe I like or ever make... if you use regular ground turkey (not breast meat only) and make it exactly as it says, it comes out great! The combo of spices is what makes it meat loaf-y. I've tried to make it with two full packages of ground turkey but it never turns out as well... so I make a couple of burgers with the leftover instead.
I could only buy 1.3 lbs. packages of turkey, so I modified the recipe for 2 pkgs. Then I increased the baking time by 15 mins. Well, that burned it. It was still somewhat edible, with lots of ketsup, but very disappointing. I will try again and bake it way less. I think that even the 1 hr 15 min time would be way too much at 400 degrees.
This is a great recipe for traditional style meatloaf. I added a cup of chopped onion since I cannot even conceive of a meatloaf without it. Other than that I did not change a thing. I think you could leave out the cheese though, it was not noticeable. Great tasting, my husband had two pieces and he hardly ever gets seconds. The cooking time seemed a bit long, I would check on it after 1 hour.
