  • 4 tablespoon(s) unsalted butter
  • 1/4 cup(s) all-purpose flour
  • 4 cup(s) turkey stock warm
  • 1 sprig(s) thyme
  • 4 piece(s) dried porcini mushrooms optional
  • 2 tablespoon(s) Madeira optional
  • 1 tablespoon(s) kosher salt


  1. 1. Melt butter in saucepan over medium heat
  2. 2. Whisk in flour, cooking blond (cafe au lait color); 3=4 minutes
  3. 3. Gradually whisk in turkey stock
  4. 4. Bring to boil, lower heat to bare simmer
  5. 5. Add thyme (or 2 bay leaves), porcini, and madeira
  6. 6. Simmer until reduced in half
  7. 7. Remove herbs & mushroom
  8. 8. Season with salt
