Ingredients
- 8 ounces deli-style turkey, cubed
- 1 Gala apple, cored and thinly sliced
- 1/2 cup chopped red onion
- 1 (5-ounce) package spring greens salad mix
- 1/4 cup pecans, toasted
- 1/3 cup (1.3 ounces) crumbled Gorgonzola cheese
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup frozen apple juice concentrate, thawed
- 1/4 cup balsamic vinegar
- 1 1/2 teaspoons dark sesame oil
Preparation
- Combine first 3 ingredients in a medium bowl; toss well.
- Place 1 1/2 cups spring greens on each of 4 plates. Top evenly with turkey mixture; sprinkle with pecans, cheese, and pepper.
- Combine apple juice concentrate, vinegar, and oil; stir well with a whisk. Spoon about 3 tablespoons dressing over each serving.
