Ingredients
- 3 turkey tenderloins (about 2 pounds)
- 1 (1 1/4-ounce) envelope taco seasoning
- 1 celery rib, chopped
- 1 onion, chopped
- 1 (14 1/2-ounce) can mild diced tomato and green chiles, undrained
- 1 cup (4 ounces) reduced-fat shredded Cheddar cheese
- 8 (7 1/2-inch) flour tortillas
- Toppings: shredded lettuce, light sour cream, sliced olives, chopped tomato
Preparation
- Cut turkey into 2 1/2-inch strips. Place in a heavy-duty zip-top plastic bag. Add taco seasoning; seal and shake to coat.
- Place turkey, celery, and onion in a 2 1/2-quart slow cooker. Stir in tomato and green chiles. Cover and cook at HIGH 4 hours. Stir in cheese.
- Warm tortillas. Spoon turkey mixture in center of each tortilla; roll up. Serve with desired toppings.
