Turkey Cobb Sandwiches

Bookend the traditional ingredients of a Cobb salad with two slices of fresh wheat bread, and you've got a flavorful Turkey Cobb Sandwich. As an added convenience, you can now purchase boiled eggs at your supermarket. If you can't find them in your local store, hard-cook your own a day ahead. It will make preparation for this recipe quick and easy. Serve the sandwich with waffle-cut carrot chips.

Prep: 10 minutes

  • Yield: 4 servings (serving size: 1 sandwich)


  • 2 tablespoons reduced-fat mayonnaise
  • 8 none (1-ounce) slices double-fiber wheat bread (such as Nature's Own), toasted
  • 4 none small green leaf lettuce leaves
  • 4 none tomato slices
  • 6 ounces shaved deli turkey
  • 1 none peeled avocado, sliced
  • 4 none precooked bacon slices
  • 2 none hard-cooked large eggs, sliced


1. Spread 1/2 tablespoon mayonnaise evenly over each of 4 bread slices. Layer each evenly with lettuce and remaining ingredients. Top with remaining 4 bread slices. Cut each sandwich in half diagonally.
