Ingredients
- 1 1/2 teaspoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Dijon mustard
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups arugula
- 3 slices deli turkey
- 2 tablespoons dried cranberries
- 1 tablespoon chopped pistachios
- 1 4-inch whole-wheat pita
Preparation
- Whisk olive oil, balsamic vinegar, Dijon mustard, salt and pepper; toss with arugula. Divide salad atop turkey slices. Sprinkle each with dried cranberries and chopped pistachios. Roll up turkey; stuff into pita.
