  • 1/2 teaspoon grated lemon rind
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 (6 1/2-inch) whole wheat pita rounds
  • Lettuce leaves
  • Toppings: shredded carrot, tomato slices (optional)
