Ingredients

1 (12-ounce) can solid white tuna in water, drained
1/4 cup chopped pecans, toasted
1/3 cup chopped celery
1/3 cup diced Gala apple (about 1 small)
1/3 cup fat-free mayonnaise
1/4 teaspoon salt
1/4 teaspoon black pepper
4 curly leaf lettuce leaves
4 English muffins, split and toasted

Preparation

Combine first 7 ingredients in a small bowl. Place a lettuce leaf on half of each English muffin. Top evenly with tuna mixture. Top with remaining English muffin halves.
