I served this over couscous with pork tenderloin kabobs and it was a success! Company requested the recipe. I'll be making this again.
Tropical Yellow Tomato Salsa
This is great with grilled fish or chicken. You can use red tomatoes in place of yellow.

Ingredients
- 1 1/2 cups diced yellow tomato (about 1 pound)
- 1/2 cup diced peeled mango
- 1/2 cup diced peeled papaya
- 1/2 cup diced red onion
- 1/2 cup diced yellow bell pepper
- 2 tablespoons minced fresh basil
- 2 tablespoons minced fresh cilantro
- 2 tablespoons fresh lime juice
- 1/4 teaspoon salt
Preparation
- Combine all the ingredients in a bowl; toss well. Let stand at room temperature 2 hours.
