Ingredients

  • 1 cup fresh or frozen unsweetened pineapple cubes (such as Dole), plus a pineapple wedge for garnish
  • 1/2 cup soft silken tofu
  • 1/2 cup coconut sorbet
  • 1 tablespoon fresh lime juice
  • 1 tablespoon chopped fresh mint leaves
  • 1/2 teaspoon minced peeled fresh ginger
  • 2 tablespoons cold water
