My husband and I loved this dish. It was perfect for a hot summer night. I served it along side some tomato bruschetta. The changes I made were 1. I added 1 tablespoon olive oil along with the rice vinegar. 2. I grilled the shrimp for extra flavor. 3. I added walnuts instead of cashews, as that was all I had. I would definitely serve this again.

This is a fabulous recipe! I was worried about mixing tomatoes with mango, but it's perfect. I did use fresh mango and substituted fresh lime juice for the rice vinegar, and yes, I used a lot more cashews--more like a TB per person. My husband thought it was great, too. All it needed was a nice warm bread, and I made CL cormeal scones with chopped red peppers (from an old issue--97 I think), which were also delicious. This would be great for company on a hot summer evening.

This is a fantastic recipe, instead of the mango I used strawberries and rasperries because we didn't have any mangoes. Used some lemon juice and agave nectar to sweeten. Will use it again.
