1 (16-ounce) jar dry-roasted peanuts
1 (16-ounce) jar unsalted dry-roasted peanuts
18 (2-ounce) chocolate bark coating squares, cut in half
1 (4-ounce) package German chocolate baking squares, broken into pieces
1 (9.75-ounce) can salted whole cashews
1 teaspoon vanilla extract
How to Make It
Combine first 5 ingredients in a 3 1/2- or 4-quart slow cooker. Cover and cook on LOW 2 hours or until melted. Stir chocolate mixture. Add cashews and vanilla, stirring well to coat cashews. Drop nut mixture by heaping tablespoonfuls onto wax paper. Let stand until firm. Store in an airtight container. Freeze It!: Clusters may be frozen up to 1 month.
This recipe is the best ever! Usually peanut clusters taste like peanuts smothered in chocolate chips, not this recipe. The combination of 3 different chocolates (you can't go wrong there!) and the salt on the dry roasted peanuts and cashews is superb. Love the sweet/salty mix. It took about 90 minutes for all the chocolate to melt. I STRONGLY suggest the use of a crock pot liner,it really makes clean up a breeze. The recipe makes a lot of clusters but it could easily be reduced in half. I can't stay out of them. Thanks for sharing this recipe!!
Chocolate candy coating bark is called exactly that: candy coating bark. You can buy blocks of it around the holidays at Wal-Mart,, or the Wilton Candy Melts (which are delicious and available year round) at craft stores (and some Wal-Mart stores) will serve the same purpose and come in both milk and dark chocolate flavors. The candy melts also come in white or colors, and are all a white chocolate/vanilla flavor (and also taste good, but the fat used is probably not the best for you health-wise and would be best for special occasions). Unlike "real" chocolate, these set up easily when cooled.
I made these today and they turned out very well. I used all peanuts because we don't like cashews, but other than that I followed the recipe exactly. I would say that a 4 quart crockpot is too small. I used my six quart pot and I cooked it for about 45 minutes and that was enough to melt all the chocolate. The recipe made a lot and I have enough for the party tomorrow and a for a few gifts. I dropped them onto wax paper and then transfered them to candy cups.

Wow. These are really good. Very efficient, although the crock pot base is a mess to clean. I think if I had soaked it in water immediately after the last cluster was dropped it would have been better. I have some frozen now and can't believe how well they are keeping! Excellent!
