Tortellini Soup

Yield 12 cups

Ingredients

  • 3 (14 1/2-ounce) cans chicken broth
  • 2 (9-ounce) packages refrigerated cheese-filled tortellini
  • 1 (14 1/2-ounce) can diced tomatoes, undrained
  • 4 green onions, chopped
  • 2 garlic cloves, minced
  • 2 teaspoons minced fresh or 1 teaspoon dried basil
  • Garnish: shredded Parmesan cheese

How to Make It

  1. Bring broth to a boil in a large saucepan over medium-high heat; add tortellini and next 4 ingredients. Reduce heat, and simmer 10 minutes. Garnish, if desired.
