Ingredients

  • 1 1/2 teaspoons extra-virgin olive oil
  • 1 teaspoon red wine vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 1/2 cups halved grape tomatoes
  • 1/2 cup thinly sliced Vidalia or other sweet onion
  • 1/2 cup chopped fresh flat-leaf parsley
  • 2 tablespoons crumbled feta cheese

Preparation

  1. Combine olive oil, vinegar, salt, and pepper in a medium bowl; stir with a whisk. Add tomatoes, onion, and parsley to bowl; toss to coat. Sprinkle salad with feta cheese.
