Ingredients

1 1/2 teaspoons extra-virgin olive oil
1 teaspoon red wine vinegar
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 1/2 cups halved grape tomatoes
1/2 cup thinly sliced Vidalia or other sweet onion
1/2 cup chopped fresh flat-leaf parsley
2 tablespoons crumbled feta cheese

Preparation

Combine olive oil, vinegar, salt, and pepper in a medium bowl; stir with a whisk. Add tomatoes, onion, and parsley to bowl; toss to coat. Sprinkle salad with feta cheese.
