Ingredients
- 3 tablespoon(s) Olive oil
- 3 cup(s) Yellow onions(2) Chopped
- 1 tablespoon(s) Minced garlic(3 cloves)
- 4 cup(s) Chicken stock
- 1 can(s) 28oz crushed tomatoes
- 1 pinch(s) Saffron
- 1/2 cup(s) Orzo
- 1/2) cup(s) Heavy cream
- Salt and pepper to taste
Preparation
- In large pot, heat oil,medium heat,cook onions for 15 until golden brown, add garlic cook for one minute, stir in chicken stock, tomatoes, saffron, salt and pepper simmer for 15 minutes
- Cook orzo for 7 minutes, drain and add to soup with the heavy cream and simmer for 10 minutes
- Serve with shredded cheese(your choice)
