- 5 pounds ripe tomatoes, peeled, cored, and chopped
- 2 medium onions, finely chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 1 1/2 teaspoons salt
- 3/4 teaspoon dried whole oregano
- 1/2 teaspoon pepper
- 1/8 teaspoon crushed red pepper
- 1/2 teaspoon sugar
How to Make It
Combine all ingredients in a large saucepan. Bring to a boil. Reduce heat; simmer 2 hours, stirring occasionally. Press mixture through a food mill. Return mixture to saucepan. Cook over medium heat, stirring frequently, 25 minutes or until thickened.
Pour into hot sterilized jars, leaving 1/4-inch headspace. Cover with metal lids; screw bands tight. Process in boiling water bath 35 minutes.
