3 shallots, chopped
2 garlic cloves, minced
2 tablespoons olive oil
8 plum tomatoes, seeded and diced
1 to 2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1/2 teaspoon pepper
Sauté shallots and garlic in hot oil in a large skillet until tender. Add tomato and next 3 ingredients. Bring to a boil; reduce heat, and simmer 5 minutes.
