Tomato Sauce
This recipe goes with Poblanos Stuffed With Pork And Fruit
Yield: 1 1/2 cups
Ingredients
- 3 shallots, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 8 plum tomatoes, seeded and diced
- 1 to 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Preparation
- Sauté shallots and garlic in hot oil in a large skillet until tender. Add tomato and next 3 ingredients. Bring to a boil; reduce heat, and simmer 5 minutes.
