Grape Tomato, Olive, and Spinach Pasta

    This was really tasty served with salmon. I made a couple little changes based on what I had on hand. I used kale instead of spinach, so I made sure to add that with the tomatoes so it had time to soften. I used Veggie Delight penne pasta, which we love. I also used chicken stock instead of veggie stock. A nice, fresh side dish!

    This is great! I was surprised at how flavorful it is, since it is so simple. Thanks to the reviewer who shared she used kale. I'll try that next time!

    We eat a lot of pasta but this was a great combination. I used chicken broth as that is what I usually have in the fridge. The feta was a nice change from parmesan.

    This was very nice, I used Barilla Plus pasta, and it was delicious. I think that it would be a nice side dish for company but it also stood alone for an easy family dinner.

    I used chicken stock too, like the kale idea I will def try that. I would double up on the spinach next time. Loved it though - was a bit in this house!

    Really good, quick, and easy! Make double if you have a hungry crowd. I used half red pepper to make it less spicy for the kids. I would make again.

    This was a decent recipe for a quick meal. While it is not my favorite skillet pasta recipe from Cooking Light, I still enjoyed it. I did add some sweet Italian turkey sausage and a bit of extra spinach. It might have been a bit disappointing without the sausage due to the sauce being so light.

    this is a good dish but definitely needs some added flavor. I cubed a couple chicken breast and cooked with extra garlic.

    Thiis dish is healthy and simple to make, but it's boring. It seems to be missing something. When I reheated the leftovers, I added toasted pinenuts and more wilted spinach and that helped to perk it up a bit. I think next time I'd add more crushed red pepper, too. (Prep note: I used whole wheat pasta.)

    Confession - I had to use chicken stock instead of vegetable and I used canned sliced olives. I'm not a fan of olives so picked them off mine. Husband and I both thought it was excellent. I'll make it again (still picking off the olives though!)
