Ingredients

  • 1/4 CUP RED WINE VINEGAR
  • 1 GARLIC CLOVE, MINCED
  • 1/2 TSP SALT
  • PEPPER TO TASTE
  • 2/3 CUP OLIVE OR VEGATABLE OIL.
  • 1 PINT CHERRY TOMATOES, HALVED.
  • 1 1/2 CUPS MOZZARELLA CHEESE CUBED
  • 1/4 CUP CHOPPED ONION
  • 3 TBSP MINCED FRESH BASIL
  • IN A BOWL COMBINE THE VINEGAR,GARLIC, SALT, & PEPPER. WHISK IN THE OIL UNTIL WELL BLENDED. ADD THE REMAINING INGREDIENTS: TOSS TO COAT. COVER & CHILL AT LEAST 1 HOUR, STIRRING OCCASIONALLY. REMOVE WITH A SLOTTED SPOON TO A SERVING DISH. YEILD 6 SERVING.
