Tomato and Cucumber Salad

Cool, crunchy, refreshing, and simple to make - this tomato and cucumber side salad would be a welcome addition to a picnic or family reunion.

  • Yield: 6 servings (serving size: about 3/4 cup)

Ingredients

  • 3 cups chopped peeled English cucumber
  • 2 cups chopped tomato
  • 3/4 cup finely chopped red onion
  • 1/4 cup finely chopped fresh parsley
  • 3 tablespoons finely chopped fresh cilantro
  • 1/2 teaspoon salt

Preparation

Combine all ingredients in a large bowl. Cover and chill at least 2 hours. Serve with a slotted spoon.
