Ingredients

  • 1 1/4 cups water
  • 3/4 cup Israeli couscous
  • 1/2 cup halved grape tomatoes
  • 1/2 cup diced seeded cucumber
  • 1/4 cup chopped red onion
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1 1/2 ounces crumbled feta cheese

Preparation

  1. Bring water to a boil. Add couscous. Reduce heat to medium-low; cover and simmer 8 minutes or until liquid is absorbed. Stir in tomatoes, cucumber, onion, lemon juice, salt, and feta cheese.
