Tomato, Cucumber and Red Onion Salad with Mint

  • 2 large English Cucumbers
  • 1/3 cup(s) red wine vinegar
  • 1 tablespoon(s) sugar
  • 1 teaspoon(s) salt
  • 3 large tomatoes, seeded & coarsely chopped
  • 2/3 cup(s) red onion, coarsely chopped
  • 1/2 cup(s) fresh mint chopped
  • 3 tablespoon(s) olive oil


  1. Cut cucumbers in half lengthwise; scrape out seeds.
  2. Cut halves diagonally into 1/2-inch-wide pieces. Place in large bowl.
  3. Add vinegar, sugar and salt. Let stand at room temperature 1 hour; toss occasionally.
  4. Add tomatoes, red onion, mint and oil to cucumbers and toss to blend.
  5. Season salad with salt and pepper.
