Green tomato relish enlivens the flavor of Tomato-Corn Relish. Serve with your favorite entree or with Hoppin' John Hush Puppies.

1. Cook bacon in a medium skillet over medium-high heat 3 minutes or until crisp; remove bacon, and drain on paper towels, reserving 1 Tbsp. drippings in skillet. Crumble bacon.
2. Sauté corn and garlic in hot drippings 3 minutes or until tender. Stir in tomato relish, next 2 ingredients, and bacon. Serve immediately.
