- 1 shallot, minced
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 3 medium tomatoes, peeled, seeded, and chopped
- 2 tablespoons minced fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Sauté shallot and garlic in hot oil in a saucepan over low heat 1 minute. Add tomato, and simmer 15 minutes. Stir in remaining ingredients, and cook 2 minutes. Cool.
- Process tomato mixture in a food processor until smooth, stopping to scrape down sides.
