Tomato-Basil Sauce

Yield 2/3 cup

Ingredients

  • 1 shallot, minced
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 3 medium tomatoes, peeled, seeded, and chopped
  • 2 tablespoons minced fresh basil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

How to Make It

  1. Sauté shallot and garlic in hot oil in a saucepan over low heat 1 minute. Add tomato, and simmer 15 minutes. Stir in remaining ingredients, and cook 2 minutes. Cool.

  2. Process tomato mixture in a food processor until smooth, stopping to scrape down sides.
