Tomatillo Salsa

Ingredients

  • 2 cups diced fresh tomatillos (about 4 large)
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/4 cup chopped green bell pepper
  • 2 garlic cloves, minced
  • 1 tablespoon plus 1 teaspoon olive oil
  • 1/2 cup clam juice or chicken broth
  • 1/4 cup canned chopped green chiles
  • 1/4 cup lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground red pepper
  • 1 teaspoon chopped fresh cilantro

Preparation

Sauté first 5 ingredients (tomatillo through garlic) in hot olive oil in a skillet for 5 minutes. Add clam juice and next 6 ingredients (chiles through red pepper); cover, reduce heat, and simmer, stirring occasionally, 15 minutes. Remove from heat, and keep warm. Stir in cilantro.
