Tomatillos are small green fruits with a tangy, citrusy flavor. Wash them to remove the slightly sticky coating before using. Some tomatillo salsas are cooked, but this raw version preserves the tart flavor, which brightens up foods from grilled chicken to fish tacos.

Ingredients

  • 4 medium tomatillos
  • 1/2 cup coarsely chopped white onion
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1 garlic clove, coarsely chopped
  • 1 serrano chile, stemmed and coarsely chopped
  • 1 cup chopped fresh cilantro

How to Make It

  1. Remove husks from tomatillos; rinse under cold water. Quarter tomatillos; place in blender. Add onion and next 4 ingredients to blender; process until smooth. Add cilantro; process until well blended.
