Even if you don't think you like tofu, try this one. It is amazing. I didn't have shitakis, so used creminis. Was just fine. I've made it several times, sometimes doing all the veggies at once and sometimes separating the cooking as called for in the recipe. No difference. I have served it with brown rice and also with couscous believe it or not. Healthy and filling and absolutely delicious.

With over 50% of the recipe's calories coming from fat how is this "light". I'm sure its tasty but it won't be on my dinner table any time soon.

The only problem with this was that I wanted to eat too much.

Delicious! My whole family loved this and I will make it over and over. I substituted with chicken broth and I added more garlic.

Really tasty. It all went together very well. Next time, I will make more mushrooms - they were delicious. Instead of honey, I used agave. For the rice, I used short grain brown rice cooked with a bit of coconut oil and then added chopped cashews at the end. And, I coated the tofu in sesame seeds when I was cooking it. Yummy. My husband's only complaint was that I should have cut the carrots and peppers thinner. That's pretty good! Definitely a keeper.

Delicious! Next time I will cut the tofu into little cubes as my family prefers it that way.
