Toasty Tomatoes are broiled with a panko-parmesan mixture sprinkled on top for a warm, flavorful, side that’s ready in less than five minutes.

1 teaspoon grated lemon rind
1/8 teaspoon freshly ground black pepper
1 small garlic clove, minced
1 1/2 tablespoons olive oil
1/2 cup panko
4 Roma tomatoes, halved
Cooking spray
2 teaspoons grated Parmesan cheese
1/4 teaspoon salt


Combine lemon rind, pepper, and minced garlic. Mix in olive oil; toss in panko. Arrange Roma tomato halves, cut sides up, on a baking sheet; coat lightly with cooking spray. Top each with 1 teaspoon panko mixture; sprinkle Parmesan and salt evenly over tomatoes; broil 3 minutes or until cheese is bubbly.
