This has become an annual Christmas morning meal. I add dried cherries in addition to the apricots, perks up the flavor just that much more.

This is a wonderful recipe because you can adapt it depending on what you have on hand (I had pecans and raisins which I subbed for the almonds and apricots). The only thing I will change in future is the amount of brown sugar. This was too sweet for my family, so I'll cut it by half, and then serve it with maple syrup and/or honey for everyone to add to their liking. Otherwise a really really yummy recipe.

I have made this for day after Christmas brunch for a couple of years. I have never made it without people asking for the recipe.

I made this dish for a family get-together. I served it with vanilla yogurt & it was delicious. Most of the guests enjoyed it, though my husband did have trouble with the texture, so it wasn't his favorite.
