This was the side last night to a grilled provencale tuna steak. Very tasty, but really needs more lemon, which I added after tasting. Didn't have mint so used chopped cilantro and italian parsley. It worked.

I have enjoyed this recipe many times. I agree that it needs more of the dressing. I add at least another 1/8 cup lemon juice, more dijon and olive oil to the mix. It has a very high yield, so unless you are feeding many I would cut the recipe in half.
