Toad-In-The-Hole

Yield 4 to 6 servings

Ingredients

  • 1 cup milk
  • 2 eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 pound bulk pork sausage
  • Maple syrup (optional)

How to Make It

  1. Combine milk and eggs in a mixing bowl; mix well. Add flour and salt, beating until smooth. Cover; set aside 1 hour.

  2. Shape sausage into 6 patties, 3 1/2 inches in diameter and about 1/2-inch thick. Cook patties in skillet over medium heat until done, turning once. Drain sausage patties, reserving 2 tablespoons pan drippings.

  3. Place pan drippings in a 10- x 6- x 2-inch baking dish. Arrange sausage patties in dish. Pour batter over sausage patties. Bake, uncovered, at 450° for 30 minutes or until browned. Serve warm with maple syrup, if desired.
