Place 1/4 cup cake cubes into each of 8 glasses. Combine mocha- flavored cappuccino mix with 1/2 cup milk; drizzle mixture evenly over cake in each glass.
Beat cream cheese with a mixer at medium speed just until smooth. Add remaining 1 1/2 cups milk; beat until smooth. Add pudding mix and vanilla-flavored cappuccino mix; beat at low speed until blended. Fold whipped topping into pudding mixture. Spoon mixture evenly over cake. Garnish with grated sugar-free chocolate, if desired (grated chocolate not included in analysis). Cover and chill at least 3 hours.
