The easiest and quickest way to cut a watermelon: Cut the top and bottom off so it can sit flat on a cutting board. Run a sharp knife down the sides, taking off the rind. Cut it into rounds, and then cut rounds into chunks.
Makes 6 servings
4 cups chopped seedless watermelon
1/2 cup tequila
1/4 cup fresh lime juice
2 tablespoons light agave nectar
1/2 teaspoon kosher salt
Place watermelon in a 9- x 13-inch baking dish. Whisk together tequila, lime juice, and agave nectar in a small bowl. Pour mixture over watermelon, gently stirring to coat. Cover and chill 45 minutes to 8 hours. Sprinkle with kosher salt just before serving.
