Tiny Pizza Pies

It sort of feels like cheating, but this is such a fun idea for a party appetizer. All you need are a couple of frozen pizzas and a biscuit cutter. Then you just top the rounds with whatever ingredients you have on hand such as olives, mushrooms, or fresh herbs.
Yield: Makes about 24 pizzas
Ingredients
- 1 large cheese takeout pizza, unsliced
- Various toppings (such as pitted olives, marinated mushrooms and artichokes, sliced salami, sun-dried tomatoes, cheese, anchovy fillets, and fresh herbs, including basil, flat-leaf parsley, and oregano)
Preparation
- Heat oven to 400° F.
Using a round cookie or biscuit cutter, cut out as many circles as possible, avoiding the crust. Transfer to a baking sheet. Sprinkle with the toppings (except the fresh herbs, if using). Bake until warm, 5 to 10 minutes. Top with any fresh herbs (if using) and serve.
Tip: These miniature pizzas work well in almost any setting, from a Friday-night supper for the kids to a holiday cocktail party.
