Three-Pepper Slaw

Toss some cabbage with bell peppers, chopped jalapeño, green onion, and a homemade vinegar-based dressing for a crunchy, spicy slaw.

  • Yield: 8 servings (serving size: about 3/4 cup)

Ingredients

  • 1/2 cup thinly sliced red bell pepper strips
  • 1/2 cup thinly sliced green bell pepper strips
  • 1/4 cup finely chopped seeded jalapeño pepper
  • 1/3 cup chopped green onions
  • 1 (10-ounce) package angel hair coleslaw (about 6 cups)
  • 1/4 cup white wine vinegar
  • 2 tablespoons fresh lime juice
  • 1 teaspoon sugar
  • 2 teaspoons canola oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

Preparation

Place first 5 ingredients in a large bowl, tossing to combine.

Combine vinegar and remaining ingredients in a small bowl, stirring with a whisk. Pour vinegar mixture over cabbage mixture, tossing to coat.
