Thai Shrimp Noodle Soup

I love the exotic flavors in this easy-to-prepare soup. You can find fish sauce in many grocery stores or local Asian markets. A bottle will last a long time in the refrigerator.
How to Make It
Step 1
Bring water to a boil in a soup pot. Add green onions, carrots, fish sauce, chili sauce, garlic, ginger, and basil to pot. Add 2 ramen noodle seasoning packets (if you add all 4 packets, the soup will probably be too salty). Boil 5 minutes.
Step 2
Add shrimp, spinach, mushrooms, and ramen noodles. Cook 5 more minutes. Add lime juice and zest. Stir well and serve.

Doubled the aromatics as others recommended, didn't use seasoning packets, just plain gf ramen & added some chicken bouillon to the first step. Also, for 2 cups of the liquid I used soaking water from dried shiitake mushrooms. Added extra 2 C water w chicken bouillon & a bit more Siracha & fish sauce (proportioned like the first step) bc we like more broth. Served with tamari & Siracha for adults.

I don't believe I've ever written a bad recipe review, but there is no hope for this one. The chili paste makes it 3 alarm fire hot and the fish sauce makes it disgusting. Frozen pizza for dinner tonight.

This was outstanding! And so quick to make. I used a package of plain Japanese curly noodles (without seasoning packets). With the fish sauce, garlic, and ginger I didn't miss the extra seasoning and prefer less sodium.

This recipe is delicious!!! I did follow SuzMate's suggestion and doubled the green onion, garlic, ginger, and basil. I used fish sauce while cooking but added a dash of soy sauce to my bowl at the table along with extra sirachi. Yummy!!! My family cannot get enough!

I use bok choy instead of spinach, leave out the basil, reduce the carrots and noodles by half and use chicken instead of shrimp. This is awesome!
