  • 1 pound(s) linguini
  • 1 tablespoon(s) fresh basil minced
  • 1/2 cup(s) spearment minced
  • 8 ounce(s) coconut milk
  • 1 tablespoon(s) fresh ginger grated and peeled
  • 1 tablespoon(s) garlic minced
  • 1/4 teaspoon(s) salt
  • 2 tablespoon(s) fresh lemon or lime juice
  • 1/8 teaspoon(s) cayenne pepper
  • carrots julienned
  • asparagus cut in 1 1/2 in
  • red bell peppers cut in 2 in strips
  • snow peas cut in half
  • green peas/or snap peas
  • mung bean sprouts blanched and chilled
  • scallions cut 1in diagonal pieces
  • water chestnuts sliced
  • roasted peanuts
  • lime wedges
  • cliantro leaves

Preparation

  1. Use any combination of veggies to equal 4 cups. Mix dressing and toss.
