Thai Noodle Salad

    I used extra cilantro and substituted lite soy sauce for fish sauce. I didn't have cabbage so I substituted finely chopped baby spinach. It was delicious and a quick dish to make. We will be making this again!

    Flavor is very subtle. Would agree with adding some extra cilantro. Maybe some more garlic, another jalapeno, perhaps adding some peanut butter, and a little extra sesame oil. I substituted water chestnuts for the cucumber.

    this was okay - not enough sauce for my liking, however, I did use more noodles than the recipe called for. I ended up adding several tablespoons of our favorite ginger salad dressing.

    This is EXCELLENT!! Even my 10 year old loves it! It taste even better if you let sit in fridge overnight.
