Texas Poor Boy Pie

Yield one 9-inch pie


  • 1 2/3 cups sugar
  • 1/3 cup white cornmeal
  • Pinch of salt
  • 4 eggs, well beaten
  • 1/2 cup butter or margarine, melted
  • 1/3 cup milk
  • 2 teaspoons vanilla extract
  • 1/4 cup chopped pecans
  • 1 unbaked (9-inch) pastry shell
  • Pecan halves

How to Make It

  1. Combine first 7 ingredients in a medium mixing bowl; beat well. Stir in chopped pecans. Pour filling into pastry shell. Top with pecan halves. Bake at 350° for 55 minutes or until set. Cool before slicing.
