Texas Chocolate Sheet Cake

This is a rich and fudgy confection traditionally served as the groom's cake at Texas weddings.

  • Cake
  • 2 cup(s) all-purpose flour
  • 2 cup(s) granulated sugar
  • 1 teaspoon(s) baking soda
  • 1/2 teaspoon(s) salt
  • 1 cup(s) (2 sticks) butter
  • 1 cup(s) water
  • 1/4 cup(s) unsweetened cocoa powder
  • 1/2 cup(s) sour cream
  • 2 eggs, lightly beaten
  • 1 teaspoon(s) vanilla extract
  • Icing
  • 1/2 cup(s) (1 stick) butter
  • 5 to 6 tablespoon(s) milk
  • 1/4 cup(s) unsweetened cocoa powder
  • 1 box(es) (1 pound) confectioner's sugar
  • 1 cup(s) chopped pecans
  • 1 teaspoon(s) vanilla extract

Preparation

  1. To prepare cake: Preheat oven to 375' F. Grease and lightly flour a 9-by 13-inch baking pan; set aside.
  2. In a large bowl, mix together flour, granulated sugar, baking soda and salt;
  3. set aside.
  4. In a medium saucepan, bring butter, water and cocoa powder to a boil over medium-high heat, stirring frequently, until butter melts. Add the butter mixture, the sour cream, eggs and vanilla to the flour mixture and stir with a wooden spoon until all of the flour is moistened.
  5. Pour the batter into the pan and spread smooth. Bake 30 minutes, or until a toothpick comes out clean.
  6. To prepare icing: While the cake is baking, in a medium saucepan, bring butter, milk, and cocoa powder to a boil over medium heat. With a wooden spoon, stir in confectioner's sugar, chopped pecans and vanilla, until all of the sugar is moistened.
  7. Spread the icing on the cake as soon as it is removed from the oven. Cool completely in the pan on a wire rack. Cut into squares and serve.
