Tennessee Lemon Chess Pie

Ingredients
- 4 eggs, lightly beaten
- 2 cups sugar
- 1 tablespoon all-purpose flour
- 1 tablespoon cornmeal
- 1/4 cup milk
- 1/4 cup butter or margarine, melted
- 2 teaspoons grated lemon rind
- 1/4 cup lemon juice
- 1 unbaked (9-inch) pastry shell
Preparation
- Combine eggs and sugar; beat well. Add flour and cornmeal, mixing until well blended. Add milk, butter, lemon rind, and juice; beat well. Pour filling into pastry shell. Bake at 375° for 55 minutes or until a knife inserted in center comes out clean. Cool before slicing.
